Instagram Update

Flash Back Friday

Excuse the bed head, it’s nap time here and I’ve been snuggled up with Naomi and both kitties in bed. #fatfacefriday #flashbackfriday #facetofacefriday whatever it is you call it!

Photo on the left was 6 years ago, size 16 and probably around 13 stone. Photo on the right is today size 8 and 18st 11lbs. Seriously, I lived off of fast food and full fat soda my whole life. I ate whatever I wanted and had no self control. If I can do this you can do this!! It’s been so hard and even though I’ve been in maintenance for almost 5 months, I still struggle daily with cravings and old habits.

Just because someone reaches their target weight doesn’t mean they don’t struggle. Healthy living journeys are never done, they just change and adapt. It is just that though, healthy living. You can lose all the weight you want but unless you change your lifestyle and habits, you won’t keep it off! It takes a lot of hard work, will power and determination but it’s worth every minute.

Morning! Breakfast is a ham, tomato and onion omelet, wholemeal toast and a cappuccino. I weighed myself out of paranoia from all the bad things I’ve had this past week – I actually lost weight and dipped to 8st 11lbs!

It’s definitely down to stress, but I’m hoping the stress factor will end today.. or Monday at the latest. It’s life changing so please keep everything crossed please!

Evil Donuts

Lunch is Mediterranean rice with heck chicken Italia sausages and 2 plums. I haven’t had plums in so long, I forgot how much I enjoy them!

Someone brought in raspberry jam donuts and was offering them out. It took every drop of willpower to not eat one of those gooey delicious balls of joy, I managed though. Now I’m sitting here hungry wishing I had one haha! A healthy snack is in order when I get home to last me until I get to cook dinner this evening. Trying out a brand new recipe tonight, something I have never eaten or made before. Should be interesting, so watch this space.

Yum In A Jar

Breakfast this morning is Greek yogurt, pineapple, banana and cacao nibs in my new massive mason jar! Love the pink lid. This was such a refreshing breakfast after all the naughty food from the weekend. I enjoyed it but I miss my health food!

I’ve ordered some chia seeds as well, I can’t wait to try recipes with it!

Tater tots where a common side dish growing up in America. Imagine it as the child equivalent of mush peas with fish and chips. I would normally have these in school with a side of ketchup for dipping. Classically, these are potato based and fried so that you have a crunchy outside and soft inside. Not like a chip mind you, as they are cylindrical and I suppose a bit like a hash brown. As you can imagine, not waist line friendly. Definitely not the worst offender in the world and can be had in their own right as an occasional treat. I got a random craving for them yesterday afternoon and I know from past experience, they aren’t easy to come by in the UK. It got me thinking if I could come up with a healthier version that I could make at home.

The first thing that came to mind was cauliflower. I swear I’m not obsessed with this vegetable, it’s simply a fantastic low carb substitute such as tortillas or a pizza base. I had a look at some basic homemade tot recipes and got to work on creating my own low calorie and low carb version. My take uses cauliflower, bread crumbs and cheese to create these skinny tots. Each serving, which is about 5 tots, comes in at only 67 calories! Tack on a few more if you’re using a dip, but to be honest I ate a few straight from the oven and they were divine. A batch will yield around 30 tots, depending on how big you make them. This recipe is quite time consuming and forming the tots can be a little tricky, but it is hands on fun and well worth the time spent.
