Lunch is an ugly looking but tasty salad.

Chicken, lettuce, 1/2 tbsp light mayo, cherry tomatoes, avocado and black olives. Surprisingly filling as well. Should have saved my avocado for taco Tuesday though, don’t think I can warrant eating a whole avocado in one day!

Salads Over Tacos

Lunch is a subway salad while the little one sleeps. There are a lot of new food places in the shopping centre by me including Burger King and a taco shop! Needed all the will power to not eat badly!

Disappointment on Toast

So I woke up craving toast and cereal. All the carbs! I think it’s because yesterday was very low carb. 

I gave in to my craving and had cornflakes and toast with jam. I’ve never been so disappointed! Nothing worse than craving food then being disappointed in the taste drowning my sorrows in a skinny cappuccino haha!

Boodles of Noodles

Dinner is Spanish chicken and chorizo with boodles and all the veg! Eat the rainbow, folks!

I think the hubs thought I was trying to poison him with the boodles. His words were, “they’re okay but they don’t taste like noodles.” No, darling, they won’t do. They’re butternut squash. Silly man!

Eat The Rainbow

Lunch is porridge with pineapple, cantaloupe, strawbs, grapes, raisins and 3 dark chocolate nibs. Lovely, filling and so satisfying.

I was a little annoyed at my pack of sultanas and chocolate. 93 calorie pack and I had 3 chocolate nibs. I got ripped off! On the plus side, Sainsburys was looking after my waist line haha.

Back to Basics

Breakfast this morning is mango chunks. After last night my body is craving fruit and basic foods. Keeping it simple today! I paid for it in the middle of the night. I had the worst belly ache from the greasy finger foods. One day I’ll learn my lesson.

Judgemental Pudding

Breakfast this morning is chai pudding flavoured with choc shot and coconut. The amount of abuse I got from eating this in the office! General consensus was it was frog spawn. Really puts a damper on when you’re trying to eat. 

I think I’ll keep this for a breakfast at home because comments like that put me off eating. Eating in public is hard for me still and has been since my teenage years, so when people make comments about my food and what I’m eating I get put off.

Freezer To The Rescue

Dinner tonight is skinny beef pie. Didn’t get in the house til late and thankfully I had this in the freezer! Huzzah!

More Sleep Please

Had such a rubbish nights sleep! Busy day today as well. Days like today I wish I drove. There is a parent child afternoon at my daughters nursery. I said we would go but it’s all the way in Birmingham out of the city centre. Easily over an hour just to get there for 15 minutes to turn around and head home again. Debating on if we even go, ugh. I feel like a bad mom if we don’t haha. 

Breakfast this morning is peanut butter on toast with a strawberry, pear and banana smoothie. I ended up wearing half the smoothie. I could really do with a blender..

Skinny Mini Cheesecake

After falling off the wagon and continually eating my weight in sweet foods, I knew something had to give. I need sweet treats like flowers need the sun. Don’t judge. I was trying to think of a dessert I could make with things I have in the cupboards that was not only low in calories but would feel naughty. Let’s be honest, a good pudding is a naughty pudding. My daughter came up to me asking for a biscuit. The “biscuits” we give her are the Heinz Baby Biscotti. The pack I grabbed today was chocolate, which she doesn’t have often. She offered me a bite, and to my surprise it was really good and turned quite creamy whilst eating. I thought they would make a great pie base. Mainly because they taste good but also because 3 biscottis are only 63 calories.

Queue lightbulb above my head. Cheesecake! I had exactly what I needed for a skinny no bake version for under 200 calories. My version uses light cream cheese and Greek yogurt to create a creamy cheesecake. Toss in a few other cupboard staples with the biscotti and you’ve got yourself a healthier cheesecake! Rather than making a standard size cheesecake and risk eating too much, because I would, I made individual ones. I used good sized ramekins which yield a big portion. Benefits of being low calorie, you can have a bigger portion. Thank you Naomi, credit goes to you for asking for a biscuit.
