Fridge Raider

More of a fridge clear out, got to eat stuff before it goes off! 

Lunch is 3 small white baps with homemade tuna mayo and sweetcorn mix and some of what’s left of the salad olivier from Saturday. This wasn’t a healthy lunch at all, but could have been a lot worse. My issue lately isn’t unhealthy food but not stopping when I have a dessert or chocolate. To help with that, I’ve made a low cal dessert for tonight!

One of my favourite pies is steak and ale. Unfortunately, its really not healthy eating friendly. A pub version of steak and ale pie with mash and peas can have you eating around 1,000 calories. I don’t know about you, but I’d rather not waste my calories on a pie! I was having a flick through my recipe books and got an idea for my own beef pie from the Hairy Bikers. They use pizza base mix instead of pastry – genius! I wasn’t too keen on their ingredients, so I switched it up for my own version of a skinny beef pie. I know, shocker isn’t it?

I already had some Quorn mince in the freezer, so I tossed out the beef from this beef pie. By all means, use extra lean beef mince or even turkey mince if you like.  I also didn’t want to use any sort of potato as the pizza base was going to make this quite a carby meal. So I swapped the ale for a flavourful thick beef stock and potatoes for cannellini beans. Each pie only clocks in at 318 calories and a massive 15g of protein. This can make up for the fact that this is a bit high in carbs. Every now and then you can allow an indulgent carby meal! Before attempting to make this dish I should let you know this is based off of 6 individual pies and you will need individual pie dishes. This is a time consuming dish due to making up the pizza base dough, so this may be best kept as a weekend meal or on a day where you have a free afternoon. Likewise, the pie filling can be made up in advance and put in the fridge.

Sunshine and Coffee

The sunshine is a perfect way to clear your head. Also, a much needed caffeine fix of a skinny sugar free iced vanilla latte after a very hectic day! This is literally the first chance I had all day to relax, all before rushing off my feet again! Another bubble bath may be in order tonight.

Breakfast was a Battle Oats chocolate brownie and an apple. Lunch was a mozzarella, tomato and avocado ciabatta with sweet potato fries.

Binge and Struggle Snuggles

I binged mini binge but still a binge. Triggered by my headache, shark week coming and eating greasy frozen oven food. 3 mini samosas, spicy wedges, 3 spring rolls, fish finger, chicken nugget, 2 Chinese parcels, package of mini Jaffa cakes, rich tea biscuit and a frozen yogurt pop. That’s on top of my frappe earlier.

Not the worst thing in the world but still made me feel shit. I’m out for a meal for lunch tomorrow and out again on Friday for a work colleagues leaving drinks and meal. No doubt a gain will happen, but nothing that won’t come right back off again. Onwards and upwards right? Consoling myself with Zelda cuddles whether she likes it or not.

Leftover Glory

Lunch today is beef stew with hazelnut picada and a Pepsi Max.

Recipes like this always taste so much better after sitting in the fridge overnight. All the spices and herbs properly set into the dish and take it to another level. This was inhaled this afternoon.
